For Lindsey and the rest of the world:
The Dorito Casserole Recipe!
1/2 bag of nacho cheese doritos, crushed
1 lb of hamburger meat ( or soy or whatever you vegetarians eat en lieu )
half an onion
1 can of rotel ( or chiles mixed with diced tomatoes)
taco seasoning
a little can of chopped olives
1 pint of sour cream
1 bag of Mexican blend cheese
paprika or chile powder
1.grease a 9x13 pan and cover the bottom with a layer of doritos.
2.in a skillet with a little bit of oil, sautee chopped onion, then add meat or meat substitute. If it looks greasy after the meat is browned, drain.
3. add taco seasoning, rotel, and olives in the skillet and blend.
4. pour this mixture on top of the doritos
5. layer the sour cream on top of the meat layer
6. cheese goes on top
7. garnish with the paprika or chile powder
8. put in 350 degree oven for...i think it's 30 minutes. watch it though, i'm remembering this all from the top of my head. cheese should be browned and bubbly on the edges.
I made that with this:
Trevor's Mom's 7-Layer Cookies:
2 sticks of margerine
2 cups approx. of crushed graham cracker
1 cup coconut
6 oz bag of butter scotch chips
6 oz bag of chocolate chips
1.5-2 cans of eagle brand milk
(optional) chopped nuts
also in 9x13 pan:
1.melt margarine and pour on top of graham crackers. this is the bottom layer
2. layer coconut
3. layer butterscotch chips
4. layer choco chips
5. pour eagle brand milk on top. use best judgement, it should be saturated but not swimming. i used a can and a half when the recipe called for 2 cans.
6. margarine should be oozing to the top by now, sop it up by adding a little more crushed graham or the chopped nuts.
bake for....i dunno...30 minutes, 300-350. or when gooey and cooked-looking.
The cookies are fabulous. I had leftovers of the casserole and cookies for a week and a half, and this is after sending some home with my friends. I weighed myself yesterday and I've gained 6 lbs. I worked out so hard yesterday my back hurts. I somehow ran 3 miles. My body amazes me. So in conclusion, this food is great but not healthy. Cheers!
